What Does Epazote Taste Like?

Epazote has a much stronger and more unusual flavour than oregano, coriander or parsley. It is herbal and earthy, with tangy, resinous and lightly minty-anise characteristics.

The dried herb becomes more integrated as it cooks, which is why it is commonly added to moist dishes rather than simply sprinkled over finished food. Long-simmered beans, broths and sauces give the flavour time to soften and spread through the recipe.

Because the flavour is concentrated, epazote is normally used in smaller quantities than familiar everyday herbs. Adding too much can dominate the other ingredients.
