Ingredients:

  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup broccoli florets
  • 1 carrot, julienned
  • 1/2 onion, sliced
  • 2 tbsp soy sauce or teriyaki sauce
  • 1 tbsp olive oil or sesame oil
  • 1 cup cooked brown rice

Instructions:

  1. Heat the olive oil or sesame oil in a non-stick skillet over medium heat.

  2. Add the bell peppers, broccoli, carrots, and onions to the pan. Stir-fry for about 5-7 minutes, or until the vegetables are tender yet crisp.

Variation – Tofu Stir-Fry:

For a plant-based protein boost, add tofu to this stir-fry! Simply press the tofu to remove excess moisture, cut it into cubes, and sauté it in a separate pan until golden and crispy. Then, toss the cooked tofu into the vegetable stir-fry and mix well. The tofu adds extra protein and a nice texture to the dish!
