Quick Recipe: Yoghurt Flatbreads

A simple pan-cooked flatbread for wraps, curries, dips or garlic-butter sides.

→ 1 cup Organic White Stoneground Wheat Flour

→ Approximately ¾ cup Greek yoghurt

→ A pinch of salt

→ Garlic butter for serving, optional

Mix the flour, yoghurt and salt until a soft dough forms. Add the yoghurt gradually because thickness can vary between brands. Knead briefly on a floured surface, cover and rest for 5 minutes. Divide into four portions, roll thinly and cook in a hot, dry pan for 1–2 minutes per side, or until cooked through and lightly browned.

Celestial Cranberries

I am used to supermarket brands of cranberries but they are all sweetened with sugar. I didn’t realise that you could buy organic cranberries until I stumbled on Spice Bloom earlier this year when seeking organic alternatives to our regular supermarket purchases.
This Labour Weekend I handed out teaspoons of these cranberries to several family visitors. You should have seen the looks on their faces. And the inevitable question where do you get these? So I told them.
The fruit is plump and juicy and the resultant flavour is intense. Too often people eat without much chewing. The fruit here rewards because the more you chew the better it gets.
