SpiceBloom Organic Millet Flour is traditionally stoneground from certified organically grown millet. It has a mild, gently nutty flavour and a soft texture that makes it useful in both sweet and savoury recipes.

Millet itself is a naturally wheat-free grain, but this product is packed in a shared facility that also handles wheat and gluten. It is therefore not represented as gluten-free and is not suitable for people with coeliac disease or severe gluten allergies.

¾ cup SpiceBloom Organic Millet Flour

¼ cup Organic Sorghum Flour

1 tablespoon baking powder

→ A pinch of salt

1 cup dairy or plant-based milk

2 eggs

1 tablespoon melted coconut oil or butter

Whisk the millet flour, sorghum flour, baking powder and salt together. In a separate jug, combine the milk, eggs and melted oil or butter. Pour the wet mixture into the dry ingredients and stir until combined. Rest for 5 minutes, then cook ¼-cup portions in a lightly oiled frying pan until bubbles form and the edges begin to set. Flip and cook until golden and cooked through.
